I happily confess that the recipes for the enchiladas and for the dressing come from links I found on Pinterest, but here they are for you to enjoy ASAP.
Chicken Enchiladas with Green Chili Sour Cream Sauce
10 soft taco shells
2 c. cooked shredded chicken
2 c. shredded Monterey Jack cheese
3 T. butter
3 T. flour
2 c. chicken broth
1 c. sour cream
1 (4 oz.) can diced green chilies
1. Preheat oven to 350 degrees. Grease a 9 x 13 pan.
2. Mix chicken and 1 c. cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do NOT bring to a boil. You don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min. and then under high broil for 3 min. to brown the cheese.
Raspberry Vinaigrette Dressing
1 small shallot, minced
1/2 c. raspberry preserves
1/8 c. honey
1 t. dry mustard
1 t. salt
1/4 t. white pepper
1/2 c. white distilled vinegar
1/4 c. water
Put these ingredients into a blender or food processor and process until combined. Slowly add
1/3 c. olive oil
1/3 c. canola oil
Blend until well mixed. This dressing will keep in the refrigerator for several weeks.
